Orange Coconut Crisps Recipe

Orange Coconut Crisps
Ingredients
- 1/2 cup butter or margarine
- 1 cup sugar
- 2 eggs
- 1 teaspoon vanilla
- 1 tablespoon orange rind
- 2 1/2 cups flour
- 1/4 teaspoon soda
- 1/2 teaspoon salt
- 1 teaspoon baking powder
- 1/4 cup orange juice
- 8 ounces coconut, shredded
Instructions
- Cream butter and sugar until fluffy
- Beat in eggs, vanilla, and orange rind
- Sift flour with baking soda, salt, and baking powder
- Add half the flour blending well
- Add orange juice
- Blend in remaining flour
- Spread coconut on was paper in a shallow pan
- Drop cookie dough by teaspoonfuls on coconut
- Roll in coconut coating generously
- Place cookies 1 1/2' apart on greased cookie sheets
- Bake for 15 minutes at 375 degrees
