Onion Pot Roast Recipe

Onion Pot Roast
Ingredients
- 3 to 4 lbs. beef or blade pot roast (stew meat)
- 3 Tb. flour
- 3 Tb. lard or drippings
- ½ t salt
- 1 can onion soup
- 1 cup water
- 8 medium carrots
- 3 stalks celery (potatoes)
- flour for gravy
Instructions
- Dredge meat in flour.
- Brown in lard or drippings.
- Pour off drippings.
- Combine salt, onion soup and water and add to pot roast. C
- over tightly and simmer 2 hours.
- Cut each carrot, crosswise into 3 pieces and celery into 2 inch pieces.
- Add to meat and continue cooking for 45 minutes, or until meat is tender and vegetables are done.
- Thicken cooking liquid for gravy, if desired.
