Onion Pot Roast Recipe

Onion Pot Roast
Yield: 6 to 8 servings

Onion Pot Roast


  • 3 to 4 lbs. beef or blade pot roast (stew meat)
  • 3 Tb. flour
  • 3 Tb. lard or drippings
  • ½ t salt
  • 1 can onion soup
  • 1 cup water
  • 8 medium carrots
  • 3 stalks celery (potatoes)
  • flour for gravy


  1. Dredge meat in flour.
  2. Brown in lard or drippings.
  3. Pour off drippings.
  4. Combine salt, onion soup and water and add to pot roast. C
  5. over tightly and simmer 2 hours.
  6. Cut each carrot, crosswise into 3 pieces and celery into 2 inch pieces.
  7. Add to meat and continue cooking for 45 minutes, or until meat is tender and vegetables are done.
  8. Thicken cooking liquid for gravy, if desired.
