Every once and a while you can find a good cookbook with Vintage Recipes on Amazon. I don’t have any recommendations as I haven’t bought any as I prefer the handwritten recipes that you see on our site.

One Egg Cake

One Egg Cake

Cook Time: 25 minutes
Total Time: 25 minutes


  • 2 cups cake flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 4 tablespoons butter or shortening
  • 1 cup sugar
  • 1 unbeaten egg
  • 3/4 cup milk
  • 1 teaspoon vanilla


  1. Measure 2 cups sifted Swans Down Cake Flour.
  2. Add 2 t baking powder and ¼ t salt and sift together 3 times.
  3. Cream 4 T butter or other shortening; add 1 cup sugar gradually, creaming thoroughly.
  4. Add 1 unbeaten egg and beat well.
  5. Add flour. Alternately ¾ cup milk in small amounts, beating well after each addition.
  6. Add 1 t vanilla.
  7. Bake in 2 greased 8 inch layer pans in moderate oven (375) 25 minutes.

My mother in law used to make this cake (or one very similar) a lot when my husband was a young boy. The recipe in her cookbook had an orange variation of this cake. Do you happen to have that variation of the recipe? My husband’s birthday is in a couple days and I would love to fix it for him. Thank you in advance. Stacey
