No Cook Marshmallow Frosting

No Cook Marshmallow Frosting

Ingredients

  • 2 egg whites
  • 1/4 teaspoon salt
  • 1/4 cup sugar
  • 3/4 cup light corn syrup
  • 1 1/4 teaspoon vanilla

Instructions

  1. Beat egg whites and salt until foamy
  2. Gradually beat in the sugar
  3. Beat until mixture is smooth and glossy
  4. Beat in syrup a little at a time
  5. Beat until frosting holds firm peak when beater is raised
  6. Fold in vanilla

No Cook Marshmallow Frosting

COOK’S NOTES

  • This recipe makes enough to frost 2 x 9″ layers or 1 x 10″ tube cake
  • Variation – add at end 1 cup coconut or 1/4 cup chopped nuts, chopped raisins, or candied cherries
