I am not sure why this is named a “Boston” fudge cake – I have researched the name and cannot find anything online that tells the history.

FUDGE CAKE

“Fudge cake” is also a term in the American South to refer to a dense, single-layer chocolate cake served with or without icing. It is similar to a brownie, although moister with more chocolate.

SOURED MILK

Soured milk denotes a range of food products produced by the acidification of milk.

Acidification, which gives the milk a tart taste, is achieved either through bacterial fermentation or through the addition of an acid, such as lemon juice or vinegar.

The acid causes milk to coagulate and thicken, inhibiting the growth of harmful bacteria and improving the product’s shelf life.

Ingredients

  • 1/2 cup shortening
  • 2 cups brown sugar
  • 2 eggs
  • 2 1/4 cups flour
  • 1 teaspoon soda
  • 1 teaspoon salt
  • 1/2 cup sour milk
  • 1/2 cup cold water
  • Vanilla
  • 1 1/2 squares of melted chocolate
