Mousse au Chocolate

Mousse au Chocolate (VRP 034)

Ingredients

  • 4 squares of bitter sweet chocolate
  • 4 egg whites
  • 1 cup heavy cream
  • Sugar to taste

Instructions

  1. Break chocolate into small pieces and melt until smooth in a double boiler
  2. Beat egg white until stiff and fold in chocolate
  3. Whip cream until fluffy and sweeten with sugar to taste
  4. Fold whipped cream into chocolate mixture
  5. Chill well before serving
