Mexican Wedding Cakes Recipe

Mexican Wedding Cake
Yield: 4 dozen

Mexican Wedding Cakes

Cook Time: 18 minutes
Total Time: 18 minutes

Ingredients

  • 1 cup butter or margarine
  • green food coloring
  • 1/4 cup sugar
  • 2 cups sifted flour
  • 1 teaspoon vanilla
  • 1 cup nuts, ground

Instructions

  1. Beat butter or margarine until very fluffy
  2. Add food coloring and mix well
  3. Add remaining ingredients
  4. Shape into balls and flatten to 1/4" thickness, about the size of a nickel
  5. Bake on ungreased cookie sheet 18 - 20 minutes at 325 degrees
  6. Remove from pan and roll in confectioners sugar
