Mexican Wedding Cake Cookies, or Snowball Cookies or Russian Tea Cakes, are a delightful treat. These small, buttery cookies are rolled in powdered sugar, giving them a sweet, melt-in-your-mouth texture. Perfect for weddings, holidays, or any festive occasion, they are a cherished dessert with a rich history.
These are some of my favorite cookie recipes, especially when pecans or walnuts are added.

Mexican Wedding Cake
FAQ
Why are they called Mexican Wedding Cakes?
They are named for their popularity at celebrations, particularly weddings, in Mexico and other Latin American countries.
Can I substitute the butter?
For the best texture, stick with real butter. Margarine or shortening won’t give the same flavor or consistency.
Why roll them in powdered sugar twice?
Rolling them while warm helps the sugar stick, while a second roll ensures a smooth, even coating.
Food History
Mexican Wedding Cake Cookies have origins tracing back to medieval Arab baking traditions, which were later adopted by Spain and brought to the Americas. Known for their simple ingredients, these cookies became a symbol of celebration and hospitality. Variations of these cookies exist worldwide under different names, such as Russian Tea Cakes in the U.S. or Polvorones in Spain.
Their buttery, nutty flavor pairs beautifully with powdered sugar, creating a timeless treat that has been passed down through generations. These cookies remain a staple for festive occasions, loved for their simplicity and elegance.
Timeline

Recipe Discussion
Mexican Wedding Cake Cookies are made with just a handful of ingredients—butter, powdered sugar, flour, vanilla, and salt. This simplicity creates a rich, crumbly cookie with a delicate sweetness. The dough is stiff, allowing it to hold its shape when baked.
The magic lies in the powdered sugar coating. Rolling the cookies immediately after baking ensures the sugar clings to the warm cookies. A second coating after cooling adds a snowy, festive finish. These cookies are perfect for serving at events or as a homemade gift.
Preparation Tips
- Use room temperature butter: This helps create a smooth dough.
- Do not overbake: These cookies should stay light in color with just a hint of golden edges.
- Roll warm cookies gently: Handle carefully to avoid crumbling.
- Double-roll in powdered sugar: For the perfect finish, roll once when warm and again after cooling.
- Store properly: Keep in an airtight container to maintain freshness.
