Mardi Gras Party Cake

Ingredients

  • 2/3 cup butterscotch morsels
  • 1/4 cup water
  • 2 1/4 cup sifted flour
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 cup shortening
  • 1 1/4 cup sugar
  • 3 eggs, unbeaten
  • 1 cup buttermilk or sour milk
  • Butterscotch Filling
  • Sea Foam Frosting

Instructions

  1. In a saucepan, melt the butterscotch morsels in the water
  2. Cool
  3. Sift together the flour, salt, baking soda, and baking powder
  4. Set the dry mixture aside
  5. Add the shortening and cream well
  6. Add the sugar
  7. Add the unbeaten eggs and beat well after each addition
  8. Blend in the melted morsels and mix well
  9. Add the dry ingredients with the buttermilk (or sour milk) beginning and ending with dry ingredients
  10. Blend well after each addition
  11. Turn mixture into 2 9" round pans which have been greased and floured on bottoms
  12. Bake at 375 degrees for 25 - 30 minutes
  13. Cool
  14. Spread the butterscotch filling between the layers and on top to within 1/2: of edge
  15. Frost side and edges with the Sea Foam Frosting or whipped cream
