Mama Romano’s Baked Lemon Chicken
Food History
Baked lemon chicken is a staple in Italian-American cuisine, reflecting the Italian love for simple, fresh ingredients that deliver bold flavors. Chicken, a common protein in many cultures, pairs beautifully with the bright, tangy notes of lemon. This combination is particularly popular in Southern Italy, where citrus fruits are abundant and often used in cooking to add brightness to dishes.
Thyme, an herb native to the Mediterranean, adds a subtle earthiness that complements the lemon and chicken perfectly. In Italian cooking, thyme is often used in conjunction with other herbs like rosemary and oregano, but in this dish, it stands out as a key flavor component.
The technique of browning the chicken before baking ensures that the meat remains moist and flavorful, while the lemon slices and juice permeate the chicken as it cooks, infusing it with a fresh, vibrant taste. The onions and garlic, cooked until they’re sweet and tender, provide a savory base that balances the acidity of the lemon.

Recipe Discussion
Mama Romano’s Baked Lemon Chicken is a perfect example of how a few simple ingredients can create a flavorful and satisfying dish. The key to this recipe is in the layering of flavors: the chicken is first seasoned and dredged in flour, which helps it achieve a golden crust when sautéed. This step is crucial as it locks in the juices and adds a beautiful color to the final dish.
The onions and garlic, sautéed until lightly browned, create a savory bed for the chicken to rest on. Fresh thyme sprigs infuse the dish with a subtle herbal note, while the chicken stock provides moisture and depth to the cooking liquid. The lemon, used both as slices and juice, brightens the dish with its tangy freshness, cutting through the richness of the chicken and the caramelized onions.
Basting the chicken while it bakes ensures that it remains moist and flavorful. The final result is a dish where the chicken is tender, the onions are sweet, and the lemon adds just the right amount of zing. This dish is not only delicious but also visually appealing, with the golden-brown chicken and lemon slices making a beautiful presentation.
Preparation Tips
- Chicken: Make sure to use boneless, skinless chicken breasts for this recipe. If the breasts are particularly large, you can pound them slightly to ensure even cooking.
- Lemon: When slicing the lemon, remove any seeds to avoid bitterness in the dish.
- Thyme: Fresh thyme is recommended for the best flavor, but dried thyme can be used if you don’t have it on hand. Just reduce the amount to 1 teaspoon.
- Basting: Don’t skip the basting step—it helps keep the chicken moist and allows the flavors to meld together beautifully.
- Serving: Let the chicken rest for a few minutes after baking. This allows the juices to redistribute, making the meat more tender.

Mama Romano's Bake Lemon Chicken
Ingredients
- 4 boneless, skinless chicken breasts
- 1 tsp. kosher salt
- ¼ tsp. freshly ground black pepper
- Flour for dredging
- 2 T. olive oil
- 3 c. thinly sliced onions
- 1½ T. thinly sliced garlic
- 8 sprigs of fresh thyme
- 1 c. chicken stock
- 2 lemons
Instructions
- One hour before cooking, season the chicken with half the salt and pepper. Preheat oven to 400°F. Dredge the chicken in flour. In an ovenproof skillet or a Dutch oven, heat 1 T. of the olive oil over medium heat. Sauté the chicken to a rich golden brown. Transfer to a plate and reserve.
- Discard the fat from the skillet and add the remaining olive oil. Add onions and garlic and cook over moderate heat until lightly browned (approximately 10 minutes). Remove from heat.
- Spread the thyme sprigs over the onions and garlic. Arrange the browned chicken breasts side by side in the skillet. Add the chicken stock. Cut 1 lemon into 8 slices, removing the seeds, and place 2 slices on top of each piece of chicken. Squeeze the other lemon into a strainer over the chicken. Return the skillet to the heat and bring the stock to a simmer. Cover and place in the oven.
- After 15 minutes, baste the chicken with the cooking liquid. Continue cooking uncovered for an additional 10 minutes, basting at least once. When done, the chicken and lemon slices will be nicely browned. Let rest for 5 minutes, then transfer to a deep-welled platter and serve.
