Low Calorie Chocolate Mousse
Ingredients
- 1 envelope unflavored gelatin
- 2 cups skim milk
- ¼ cup sugar
- 1 egg, separated
- ⅓ cup semi-sweet chocolate pieces OR 2 squares (1-oz each) semi-sweet chocolate
- 1 tsp vanilla extract
- ¼ cup non-fat dry milk
- ¼ cup ice water
Instructions
- In medium saucepan, soften gelatin in ½ cup skim milk.
- Add cornstarch, sugar, remaining 1½ cups skim milk, egg yolk, and chocolate.
- Cook over medium flame, stirring constantly until chocolate melts and mixture thickens and boils.
- Remove from flame; stir in vanilla extract.
- Place sheet of waxed paper directly onto the surface of the mixture.
- Chill until slightly thickened but not set.
- In a deep bowl, beat non-fat dry milk, ice water, and egg whites until stiff peaks form.
- Fold into chocolate mixture. Pour into serving dishes.
- Chill about 2 hours or until set.
- Garnish with a low calorie whipped topping if desired.
