Lima Beans and Scallions Recipe

Lima Beans and Scallions
Ingredients
- 3 cups shelled fresh lima beans
- 5 small scallions or green onions, cut in ½-inch pieces
- 3 tablespoons butter or margarine, melted
- 1 tablespoon all-purpose flour
- ½ teaspoon salt
- ¼ teaspoon white pepper
- ¼ teaspoon paprika
Instructions
- Cook beans in boiling salted water 20 minutes or until tender; drain, reserving ½ cup liquid.
- Saute scallions in butter until tender. Add flour, stirring until smooth.
- Cook 1 minute, stirring constantly.
- Gradually stir in reserved liquid; cook over medium heat, stirring constantly, until thickened.
- Stir in lima beans, salt, pepper, and paprika.
