Food History

Lima beans, also known as butter beans, are named after Lima, Peru, and have been cultivated for thousands of years throughout the Americas. They are valued for their high protein content and mild flavor, making them a versatile ingredient in many cuisines. Pairing them with scallions, which are used worldwide for their gentle flavor, results in a wholesome and tasty dish.

Recipe Discussion

This recipe begins by cooking fresh lima beans until they are perfectly tender. Scallions are then sautéed in butter, adding a savory richness that complements the beans’ natural sweetness. Flour is stirred into the sautéed scallions to form a roux, which thickens the reserved cooking liquid from the beans to create a smooth, velvety sauce. Seasoned with salt, white pepper, and a dash of paprika for a bit of warmth and color, the beans are then coated in this flavorful sauce, resulting in a dish that is both comforting and sophisticated.

Serving Suggestions

Lima Beans and Scallions can be served as an elegant side dish alongside grilled or roasted meats, such as chicken, pork, or steak. They also pair beautifully with fish, providing a creamy counterpoint to the delicate flavors of seafood. For a vegetarian option, serve them with a grain like quinoa or rice to make a complete protein meal.

Preparation Tips

  • Bean Texture: Be careful not to overcook the lima beans; they should be tender but still hold their shape to avoid becoming mushy.
  • Sauce Consistency: Stir the flour thoroughly into the butter and scallions to prevent lumps in your sauce. Gradually add the reserved liquid to ensure it integrates smoothly.
  • Flavor Adjustment: Taste the dish before serving and adjust the seasoning if necessary. Adding butter or a pinch more salt can dramatically enhance the flavors.
