Lima Beans and Scallions Recipe

Lima Beans and Scallions
Yield: 4 to 6 servings

Lima Beans and Scallions


  • 3 cups shelled fresh lima beans
  • 5 small scallions or green onions, cut in ½-inch pieces
  • 3 tablespoons butter or margarine, melted
  • 1 tablespoon all-purpose flour
  • ½ teaspoon salt
  • ¼ teaspoon white pepper
  • ¼ teaspoon paprika


  1. Cook beans in boiling salted water 20 minutes or until tender; drain, reserving ½ cup liquid.
  2. Saute scallions in butter until tender. Add flour, stirring until smooth.
  3. Cook 1 minute, stirring constantly.
  4. Gradually stir in reserved liquid; cook over medium heat, stirring constantly, until thickened.
  5. Stir in lima beans, salt, pepper, and paprika.
