Every once and a while you can find a good cookbook with Vintage Recipes on Amazon. I don’t have any recommendations as I haven’t bought any as I prefer the handwritten recipes that you see on our site.

Lenas Pickled Eggs and Beets

Lena's Pickled Eggs and Beets

Ingredients

  • 2 cans red beets
  • 2 1/4 cups water
  • 2 1/4 cups vinegar
  • 3/4 cup sugar
  • 1/2 teaspoon salt
  • 1 dozen hard-boiled eggs

Instructions

  1. 2 cans red beets.
  2. Drain juice (about 2 cups).
  3. Put in a large pan.
  4. Add to juice: 2¼ cups water, 2¼ cups vinegar (or less?), ¾ cups sugar (or more? 1¼?), ½ tsp salt.
  5. Stir and bring to a boil.
  6. Add beets & again bring to a boil.
  7. Put 1 doz. shelled hard-boiled eggs in a large bowl.
  8. Add beets & pour liquid ingredients over beets & eggs while real hot.
  9. Should be ready to serve in a few hours. (Chill)
