Lena’s Pickled Eggs and Beets Recipe

- 2 cans red beets
- 2 1/4 cups water
- 2 1/4 cups vinegar
- 3/4 cup sugar
- 1/2 teaspoon salt
- 1 dozen hard-boiled eggs
- 2 cans red beets.
- Drain juice (about 2 cups).
- Put in a large pan.
- Add to juice: 2¼ cups water, 2¼ cups vinegar (or less?), ¾ cups sugar (or more? 1¼?), ½ tsp salt.
- Stir and bring to a boil.
- Add beets & again bring to a boil.
- Put 1 doz. shelled hard-boiled eggs in a large bowl.
- Add beets & pour liquid ingredients over beets & eggs while real hot.
- Should be ready to serve in a few hours. (Chill)
