Lemon Oatmeal Cookies
A refreshing blend of zesty lemon and hearty oats, these cookies are soft, chewy, and full of citrus flavor.
Ingredients
- ½ cup shortening
- ½ cup br sugar
- ½ cup wh sugar
- 1 egg
- 1 tsp lemon peel
- 3 Tbs lemon juice
- ¾ cup sifted flour
- ½ tsp salt
- ½ tsp soda
- 2½ cups uncooked oatmeal
Instructions
- Cream shortening add sugars - & cream well
- Beat in egg till light & fluffy
- Add grated lemon peel & juice
- Sift dry ingredients together then add with oats to creamed mixture
- Drop from teaspoon & bake 15 minutes in moderate oven.
Notes
The first line states sugar but we believe this is a mistake when typing the card and the ingredient should be shortening instead.
