Lemon Meringue in Butter Sauce

Lemon Meringue in Butter Sauce
Ingredients
- 6 egg whites, room temperature
- 1/2 teaspoon lemon peel, grated
- 1 tablespoon lemon juice
- 1/2 teaspoon vanilla
- 1/4 cup sugar
- 4 egg yolks
- 1 tablespoon flour
- 5 tablespoons butter
Instructions
- In large mixing bowl combine the egg whites, lemon peel, lemon juice, and vanilla
- Beat at medium speed until soft peaks form (tips curl over)
- Gradually add sugar beating at high speed until stiff peaks form (tips stand straight up)
- In a small bowl beat egg yolks at high speed until thick and lemon color, about 5 minutes
- Fold in flour
- Gently fold in egg yolk mixture into stiff beaten egg whites
- In 350 degrees oven melt the oleo in 12" 7" x 2" in baking dish
- Remove from oven
- Spoon egg mixture into baking dish forming 5 - 6 even mounds
- Bake at 450 degrees for 20 - 22 minutes or until golden brown
- Sift confectioners over the top
- Serve warm
- Drizzle melted butter in bottom of dish under each serving
