Lemon Meringue Cake

Ingredients

  • 1 package (17 oz.) Pillsbury Lemon Cake Mix
  • 1-⅓ cups water
  • 2 eggs
  • 1 package (5-¼ oz.)
  • Pillsbury Fluffy White Frosting Mix
  • ½ cup boiling water
  • 1 tablespoon sugar
  • ½ cup blanced slivered almonds

Instructions

  1. Generously grease and lightly flour bottom and sides of 13x9-inch pan.
  2. In large mixer bowl, combine dry cake mix, water and eggs.
  3. Blend and beat as directed on package.
  4. Pour batter into pan.
  5. Prepare frosting mix with boiling water as directed on package.
  6. Sprinkle with slivered almonds and sugar. Bake at 350° for 35 to 40 minutes until meringue is golden brown.
  7. Cool completely.

Notes

High Altitude: 5200 feet. Prepare recipe above adding 3 tablespoons flour to cake mix. Increase water from 1-⅓ cups to 1-½ cups. Bake at 375° for 30 to 35 minutes.
