Lemon Crusted Blueberry Pie

Ingredients

  • 4 cups blueberries
  • 3/4 - 1 cup sugar
  • 3 tablespoons flour
  • 1/2 teaspoon grated lemon peel
  • Dash salt
  • 1 - 2 teaspoons lemon juice
  • 1 tablespoon margarine

Instructions

  1. Combine blueberries, sugar, flour, lemon peel, and salt
  2. Pour into pie shell
  3. Cover top of pie with second pie crust
  4. Drizzle the top pie crust with lemon juice and dot with butter
  5. Cut slits for steam to escape
  6. Bake at 400 degrees for 35 - 40 minutes
