King Crab Chowder

King Crab Chowder (VRP 350)
Ingredients
- 2 slices bacon
- 1 large sweet onion, sliced
- 1 large potato, peeled and diced
- ½ cup sliced celery
- 2 cups water
- Pinch of leaf thyme
- 1 6-oz. package Wakefield's King Crab Meat
- 1 cup milk or evaporated milk
- 1 teaspoon salt
- 1/4 teaspoon pepper
- Paprika
Instructions
In a heavy saucepan, fry the bacon crisp. Remove bacon and reserve. Add onion, potato, celery, water and thyme to hot bacon fat. Cover. Cook eight minutes. Add frozen King Crab, cover, and simmer 10 minutes or until King Crab is easily broken with a fork. Stir in milk, salt, pepper. Heat thoroughly. Serve piping hot. Garnish with paprika and crumbled crisp bacon bits. 3 Servings.
