Individual Coffee Cakes


  • 1¾ cups sifted all purpose flour
  • 2 teaspoons baking powder
  • ¼ teaspoon salt
  • ⅓ cup butter
  • 1¼ cups sugar
  • 2 eggs
  • ½ teaspoon vanilla
  • ⅓ cup milk
  • 1 teaspoon vinnamon
  • ⅓ cup chopped nuts


  1. Sift together the flour, baking powder and salt.
  2. Cream ⅓ cup butter.
  3. Add 1 cup sugar and cream well.
  4. Add eggs and vanilla; beat until fluffy.
  5. Add dry ingredients, a small amount at a time, to creamed mixture alternately with milk, blending well after each addition.
  6. Line 18 ungreased muffin pans with paper baking cups.
  7. Spoon an equal amount of batter into baking cups.
  8. Mix together remaining ¼ cup sugar, cinnamon and nuts.
  9. Sprinkle an equal amount atop each cake.
  10. Bake in 375-degree oven until done, 18 to 20 minutes.
