Impossible Bacon Pie

This Impossible Bacon Pie recipe is more like a “quiche” than a casserole.

Impossible Bacon Pie
Yield: 6 servings

Impossible Bacon Pie

Cook Time: 35 minutes
Additional Time: 5 minutes
Total Time: 40 minutes

Ingredients

  • 12 slices bacon, crisply fried and crumbled
  • 1 cup shredded natural Swiss cheese
  • ⅓ cup chopped onion
  • 2 cups milk
  • 1 cup Bisquick baking mix
  • 4 eggs
  • ¼ teaspoon salt
  • 1/8 teaspoon pepper

Instructions

  1. Heat oven to 400°.
  2. Grease 10-inch quiche dish or pie plate, 10x1½ inches.
  3. Sprinkle bacon, cheese and onions on plate.
  4. Beat remaining ingredients until smooth, 15 seconds in blender on high or 1 minute with hand beater.
  5. Pour into plate.
  6. Bake until knife inserted between center and edge comes out clean, 35 to 40 minutes.
  7. Cool 5 minutes,

6 servings.

High Altitude (3500 to 6500 feet): No adjustments are necessary.
