Ice Cream Lemon Pie

Ice Cream Lemon Pie

Ingredients

Crust

  • 3/4 cup graham crackers, crushed
  • 3 tablespoons butter

Filling

  • 2 egg yolks
  • 1/2 cup sugar
  • 1 teaspoon lemon rind
  • 1 small can evaporated milk
  • 2 egg whites, stiffly beaten

Instructions

Crust Instruction

  1. Mix the graham crackers and butter until crumbly
  2. Pat into pie pan

Filling Instructions

  1. Add the egg yolks, sugar, and lemon rind and mix well
  2. Add the egg whites to the first mixture
  3. Add the milk
  4. Pour into graham cracker crust and freeze
