Hot Rhubarb Pudding Recipe

Hot Rhubarb Pudding
Ingredients
- 4 eggs beaten
- 2 [t] vanilla
- 8 cup dried rhubarb
- 2 cup sugar
- ½ cup unbleached flour
- whipped cream
Instructions
- Preheat oven 350°
- Whisk together the eggs, sugar, vanilla & flour.
- Stir in rhubarb.
- Grease a 3 qt baking dish & pour in the rhubarb mixture.
- Bake 40 minutes or until the pudding is firm.
- Serve warm with whipped cream.

Baking time: 40 min
Yield: 8 servings
