Hot Potato Salad

Hot Potato Salad (VRP 090)


  • 2 slices bacon
  • 1 onion, chopped
  • 1 tablespoon flour
  • ¼ cup vinegar
  • ½ cup water
  • ½ teaspoon salt
  • 1 teaspoon sugar
  • 1/8 teaspoon pepper
  • 3 tablespoons prepared mustard
  • 5 cups sliced, cooked potato
  • Chopped parsley


  1. Mince bacon and fry until crisp; remove.
  2. Cook onion in bacon fat until lightly browned.
  3. Blend in flour; add bacon, vinegar, water and seasonings; bring to boil.
  4. Add potato, mixing lightly; heat.
  5. Sprinkle with parsley and serve.
  6. Or let cool, store in refrigerator, and re-heat before serving.


Serves 4.
