Hot Crabmeat Avocado
Ingredients
- 1 can (71/2 oz) crabmeat drained. Cartilage removed
- 1/3 cup chopped celery
- 3 hard cooked eggs chopped
- 2 tbsp chopped pimento
- 1 tbsp chopped onion
- 1/2tsp salt
- 1/2 cup mayonnaise
- 3 large or 4 small ripe avocados
- lemon juice
- salt
- 3 tbsp dry bread crumbs
- 1 tsp butter melted
- 2 tbsp slivered almonds
Instructions
- Heat oven 400 degrees
- Mix crabmeat, celery, eggs, pimento, onions and 1/2 tsp salt and mayonnaise.
- Cut unpeeled avocados in half lengthwise. Brush cut surface with lemon juice.
- Sprinkle with salt.
- Fill Avocado halves with crabmeat mixture.
- Toss bread crumbs with melted butter, spoon over crabmeat mixture.
- Place in a shallow baking dish. Bake uncovered 10 min.
- Sprinkle almonds over crumb topping.
- Bake 5 min longer or until mixture is hot and bubbly.
- Serve at once.

Hot Crabmeat Avocado (VRP 200)
Ingredients
- 1 can (7½ oz.) crabmeat drained, cartilage removed
- 1/3 cup chopped celery
- 3 hard-cooked eggs chopped
- 2 tablespoons chopped pimiento
- 1 tablespoon chopped onion
- ½ teaspoon salt
- ½ cup mayonnaise
- 3 large or 4 small ripe avocados
- Lemon juice
- Salt
- 3 tablespoon dry bread crumbs
- 1 teaspoon butter, melted
- 2 tablespoons slivered almonds
Instructions
Heat oven 400°. Mix crabmeat, celery, eggs, pimiento, onion, ½ teaspoon salt, mayonnaise. Cut unpeeled avocados in half lengthwise, brush cut surfaces with lemon juice and sprinkle with salt. __ avocado halves with crabmeat mixture. Toss bread crumbs with butter, spoon one crabmeat mixture. Place in shallow baking dish. Bake uncovered 10 minutes, sprinkle almonds over crumb topping. Bake 5 minutes longer, on until filling is hot and bubbly. Serve at once. 6 to 8 servings.
