Hot Crabmeat Avocado
Yield: 6-8 servings

Hot Crabmeat Avocado

Ingredients

  • 1 can (71/2 oz) crabmeat drained. Cartilage removed
  • 1/3 cup chopped celery
  • 3 hard cooked eggs chopped
  • 2 tbsp chopped pimento
  • 1 tbsp chopped onion
  • 1/2tsp salt
  • 1/2 cup mayonnaise
  • 3 large or 4 small ripe avocados
  • lemon juice
  • salt
  • 3 tbsp dry bread crumbs
  • 1 tsp butter melted
  • 2 tbsp slivered almonds

Instructions

    1. Heat oven 400 degrees
    2. Mix crabmeat, celery, eggs, pimento, onions and 1/2 tsp salt and mayonnaise.
    3. Cut unpeeled avocados in half lengthwise. Brush cut surface with lemon juice.
    4. Sprinkle with salt.
    5. Fill Avocado halves with crabmeat mixture.
    6. Toss bread crumbs with melted butter, spoon over crabmeat mixture.
    7. Place in a shallow baking dish. Bake uncovered 10 min.
    8. Sprinkle almonds over crumb topping.
    9. Bake 5 min longer or until mixture is hot and bubbly.
    10. Serve at once.

  • 1 can (7½ oz.) crabmeat drained, cartilage removed
  • 1/3 cup chopped celery
  • 3 hard-cooked eggs chopped
  • 2 tablespoons chopped pimiento
  • 1 tablespoon chopped onion
  • ½ teaspoon salt
  • ½ cup mayonnaise
  • 3 large or 4 small ripe avocados
  • Lemon juice
  • Salt
  • 3 tablespoon dry bread crumbs
  • 1 teaspoon butter, melted
  • 2 tablespoons slivered almonds

Instructions

Heat oven 400°. Mix crabmeat, celery, eggs, pimiento, onion, ½ teaspoon salt, mayonnaise. Cut unpeeled avocados in half lengthwise, brush cut surfaces with lemon juice and sprinkle with salt. __ avocado halves with crabmeat mixture. Toss bread crumbs with butter, spoon one crabmeat mixture. Place in shallow baking dish. Bake uncovered 10 minutes, sprinkle almonds over crumb topping. Bake 5 minutes longer, on until filling is hot and bubbly. Serve at once. 6 to 8 servings.
