Hot Chicken Salad Pie

Hot Chicken Salad Pie

Ingredients

  • 1 baked 10" pie shell (see page 200)
  • 1 egg white, lightly beaten
  • 3 cup cubed cooked chicken breast
  • 1½ cup sliced celery
  • 1 cup finely diced green pepper
  • ¼ cup minced onion
  • ¼ cup diced pimiento
  • ½ cup real mayonnaise
  • ½ cup dairy sour cream
  • 1 tbsp. fresh lemon juice
  • ½ tsp. salt
  • Freshly ground pepper
  • 1 cup crushed potato chips
  • ½ cup shredded sharp Cheddar cheese (2 oz.)

Instructions

  1. Preheat oven to 400°F.
  2. Brush pie shell with egg white; set aside.
  3. In a medium bowl mix chicken, celery, green pepper, onion and pimiento.
  4. In a small bowl mix mayonnaise, sour cream, lemon juice, salt and papper.
  5. Stir into chicken mixture and blend thoroughly.
  6. Pour into pie shell.
  7. In a small bowl mix potato chips and cheese.
  8. Sprinkle over top of pie.
  9. Bake for 20 minutes or until heated through.
  10. If crust browns too quickly, cover with foil for final minutes of baking.

Makes 6 servings.
