Honey Cake

Honey Cake

Ingredients

  • ¾ cup honey
  • ½ cup oleo
  • ½ tsp nutmeg
  • ½ cup brown sugar
  • ½ tsp salt
  • ½ cup strong coffee
  • ¼ tsp ginger
  • 2 eggs
  • 2 cups flour
  • 2 cups chopped apples
  • 2 tsp baking soda
  • 1 tsp cinnamon

Honey Lemon Glaze

  • ½ cup honey
  • 2 tsp grated lemon rind
  • ½ tsp ground cinnamon

Instructions

  1. Combine honey, Oleo, sugar, coffee & eggs, beat thoroughly.
  2. Combine flour, soda, cinnamon, nutmeg, salt & ginger.
  3. Add to honey mixture.
  4. Beat until thoroughly blended.
  5. Stir in apples.
  6. Pour in greased 9 x 13 pan. Bake 325° - 35 to 40 min.
  7. Do not remove from pan.
  8. Brush with warm honey-lemon glaze.

Honey-Lemon Glaze

  1. In small saucepan combine honey, lemon peel & cinnamon.
  2. Heat until consistency is there enough to brush over warm cake.
  3. Makes about ½ cup.
