Holiday Gift Cake

Total Time: 2 hours 5 minutes

Ingredients

  • 8 ounce cream cheese, softened
  • 1 cup oleo (margarine)
  • 1 1/2 cups sugar
  • 1 1/2 teaspoons vanilla
  • 4 eggs
  • 2 1/4 cups sifted cake flour
  • 1 1/2 teaspoons baking powder
  • 3/4 cup Maraschino cherries, chopped and well drained
  • 1/2 cup pecans, finely chopped

Glaze

  • 1 1/2 cups 10x sugar (confectioners sugar)
  • 2 tablespoons milk

Garnish

  • 1/2 cup Maraschino cherries, chopped and well drained
  • 1/2 cup pecans, finely chopped

Instructions

  1. Preheat over to 325 degrees
  2. Thoroughly blend the softened cream cheese, oleo, sugar, and vanilla
  3. Add the eggs, one at a time mixing well after each addition
  4. Gradually add 2 cups flour, sifted with baking powder
  5. Combine remaining flour with cherries and 1/2 cup of nuts
  6. Fold into batter
  7. Grease 10" bundt pan
  8. Bake at 325 degrees for 1 hour and 25 minutes
  9. Cool for 5 minutes and remove from oven
  10. Glaze with mixture of 1 1/2 cups 10x sugar (confectioners sugar) and 2 tablespoons milk
  11. Garnish with cherries and pecans
