- 4½ to 5 very lean ground beef
- 2 qts of milk plus probably 1 cup or 2
- 2 Macaroni large size (less 1/4 of 1 box)
- 1 plus ½ cup Parmes cheese
- 12 eggs lg. for cream sauce and 4 for topping
- 1 lg. chopped onion
- 1 teaspoon cinnamon
- 2 tablespoons plus a teaspoon or 2 tomato paste
- 2 teaspoons salt
- 1 teaspoon pepper
- 1 butter (2 for sauce)
Make meat sauce (draining fat from meat and at the same time boil macaroni el dente). Rinse and drain macaroni on cookie sheets.
Cream sauce: Heat milk to fairly warm
Melt butter, add cornstarch and stir well. Cook another 2 minutes stirring constantly
Remove from heat and add 2 tablespoons milk at a time. After ½ cup increase adding 1/4 at a time. Stirring constantly, add butter and 1 cup of cheese, 1/4 nutmeg (teaspoon) and 1 teaspoon salt.
