Green Bean Casserole
Food History
Compared to other vintage dishes, the green bean casserole has a relatively recent history. It was created in 1955 by Campbell’s Kitchen as a way to use their condensed cream soups and was originally called the “Green Bean Bake.” The recipe became an instant hit for its simplicity and rich flavor, quickly becoming a staple at holiday dinners across the United States.
Using canned soup in casseroles was a widespread trend in mid-20th-century America, as it saved time and added flavor without the need for extra seasonings or ingredients. The Green Bean Casserole was one of those classic dishes that could be made with just a few pantry staples—green beans, cream of mushroom soup, and crispy fried onions. The recipe was versatile, too, allowing cooks to substitute other vegetables or seasonings based on what they had on hand.
By the 1960s, the casserole had become synonymous with Thanksgiving dinner, alongside other holiday classics like turkey, mashed potatoes, and cranberry sauce. Today, it remains a beloved side dish, with countless variations appearing in kitchens nationwide.
Timeline
- 1955: Campbell’s Kitchen creates the original Green Bean Casserole recipe using cream of mushroom soup.
- 1960s: The dish gains widespread popularity as a Thanksgiving and holiday staple.
- 1970s-1980s: Variations of the recipe emerge, incorporating fresh, frozen, or canned green beans and different crispy toppings.
- Present Day: Green Bean Casserole continues to be a beloved, nostalgic dish in American households, particularly during holiday celebrations.
Recipe Discussion
This version of Green Bean Casserole uses several classic ingredients that give it its signature flavor and texture. It starts with 2 packages of frozen cut green beans (either French-style or regular), ensuring that the dish has a tender yet firm texture. Fresh green beans could be used as well, but the frozen variety offers convenience.
The recipe also includes 1 can of bean sprouts, which are rinsed and drained. Bean sprouts add a slight crunch and freshness to the casserole, setting it apart from the typical green bean casserole. For the creamy base, the recipe uses 1 can of condensed golden mushroom or cream of celery/chicken soup, adding rich flavor without the need for additional seasonings.
1 tablespoon soy sauce and ½ teaspoon salt give the dish a savory depth, while the inclusion of 1 can (3 oz.) of chow mein noodles or 1 cup of canned French fried onions provides the signature crispy topping.
The casserole is baked at 350°F for 35 minutes, and the noodles or onions are added in the last 5 minutes to keep them crispy. The result is a comforting, savory dish that combines creamy, crunchy, and tender textures all in one.
Preparation Tips
To get the best results for your Green Bean Casserole, consider these tips:
- Drain and Rinse Well: If using canned bean sprouts, rinse them well to remove any excess liquid and prevent the casserole from becoming soggy.
- Fresh vs. Frozen Beans: You can substitute fresh green beans if preferred. Just blanch them in boiling water for 2-3 minutes before adding them to the casserole to ensure they cook evenly.
- Choosing the Soup: The recipe allows for flexibility—cream of mushroom, celery, or chicken soup can all work well depending on your flavor preference.
- Adding Cheese: For a twist, sprinkle shredded cheddar or mozzarella cheese on top of the casserole before adding the crispy topping. This gives it an extra creamy and cheesy texture.
- Baking Dish Size: Use an 11¾ x 7½ x 1¾-inch baking dish to ensure even cooking. If you have a different size, just adjust the baking time slightly.
- Crispy Topping: Add the crispy chow mein noodles or French fried onions in the last 5 minutes of baking to keep them crunchy. You can also add a sprinkle of paprika for color and flavor.
