Companion Prize Fresh Apple Cake

Ingredients

Cake

  • 2 cups apples
  • 1 cup sugar
  • 1 1/2 cake flour
  • 1 teaspoon soda
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 cup butter, melted
  • 1 egg

Optional

  • 1/2 cup seeded raisins
  • 1/2 cup chopped walnuts

Instructions

  1. Peel and core apples
  2. Coarsely chop and measure 1 3/4 cups of nuts into a large bowl
  3. Add sugar and let stand for 10 minutes
  4. Sift flour, measure add soda, salt, cinnamon, and nutmeg
  5. Sift again
  6. Blend egg and butter into mixture'
  7. Add flour stirring just until blended
  8. Pour into greased lined pan (about 8 inch square)
  9. Bake at 350 degrees
  10. Cool ten minutes
  11. Remove from pan
  12. Cool thoroughly on rack
  13. Sprinkle with powdered sugar
