Farmer's Winter Soup

Ingredients

  • 2 qts. chicken or beef broth
  • ¼ cups butter or margarine
  • 1 large onion, sliced
  • ½ green pepper, chopped
  • 2 stalks celery and leaves, chopped
  • 2 cups sliced potato
  • 2 or 3 outside green leaves of cabbage, shredded
  • 1 cup sliced yellow squash
  • ½ lb. cut fresh green beans
  • 1 cup peas, fresh or frozen
  • ½ cup brown rice
  • 2 hard-cooked eggs, chopped
  • Parsley or chervil

Instructions

  1. Saute vegetables in butter or margarine.
  2. Add broth and cook for 30 minutes. Then add rice and cook 20 minutes more.
  3. Serve in tureen and sprinkle with chopped eggs and parsley. Add more broth if desired.
