Escalloped Celery Recipe

- 3 tablespoons minute tapioca
- 1/2 small onion, chopped
- 1 tablespoon sugar
- 1/2 teaspoon salt
- 1/8 teaspoon pepper
- 2 cups canned tomatoes
- 3 tablespoons butter
- 1 cup celery, thinly sliced
- 1/2 cup fine bread crumbs
- Add tapioca, onion, sugar, salt, and pepper to tomatoes
- Cook in double boiler for 10 minutes
- Pour into a greased baking dish.
- Place celery over the top
- Melt butter and toss with bread crumbs and sprinkle over the celery mixture.
- Bake in moderate oven for 30 minutes
