Front of Elva’s Vegetable Soup recipe. This box has a lot of vintage recipes collected from friends – this lady must have had an active social life or swapped recipes at church, etc.
I was excited when I saw a vegetable soup recipe because to me that means… well vegetables aka vegetarian. Nope, not this recipe as it calls for 1 1/2 pounds of ground beef AND beef broth. So, I guess the vegetarian husband will have to make it with fake meat to test it or I will make it for a party so I can photograph to share with you.
No method included so I developed one to guide you.
- 1 1/2 pounds ground beef
- 1 onion
- 2 cups carrots
- 2 cups celery
- 2 cups potatoes
- 2 cups whatever ?? (green pepper)
- 1 can Swanson beef broth
- 2 small cans V-8 juice
- Brown beef and drain
- Slice or chop the carrots, celery, and potatoes (your choice)
- Add to all ingredients and simmer on low until the root vegetables are tender.
