Eggplant Casserole Recipe

Eggplant Casserole (VRP 003)
Ingredients
- 1 small to medium eggplant, sliced and peeled 1" cubes
- 1/2 package sausage
- 1 can tomato sauce
- 1/4 teaspoon basil
- 1/4 teaspoon oregano
- salt and sugar to taste
- Parmesan cheese, grated
Instructions
- Slice and peel the eggplant and cut into 1" cubes
- Immerse in boiling water for 1 1/2 minutes and then drain
- Brown the sausage and drain the fat
- Mix sauce, basil, and oregano
- Cook until thick and then add the eggplant
- Place ingredients into a greased casserole dish
- Top with grated Parmesan cheese
- Bake at 350 degrees for 1/2 hour
