Egg Dish

Ingredients

  • 1 cup diced ham or Canadian bacon
  • ¼ cup chopped green onion
  • 3 T oleo
  • 12 beaten eggs
  • (1-3oz can mushrooms drained) = optional

Instructions

  1. Fry in skillet ham, onion in oleo until tender but not brown.
  2. Add eggs then scramble until set.
  3. Fold in mushrooms
  4. ____
  5. - taken from refrigerator - if have more than 1 pan in oven.
  6. For larger quantities - for every egg add ⅓ cup milk & 1 slice of bread - guess at other ingredients.
  7. To test - stick knife in center.
  8. To serve: tuch sprig of parsley under one corner - adds odor. English muffins & orange juice = rest of breakfast [menu].
  9. Can cut leftovers in half for ____ or FREEZE!
