Double Cheese Iowa Spuds

Double Cheese Iowa Spuds


  • ¾ cup chopped onion
  • 1 tablespoon margarine
  • 1 lb. Southern-style frozen hash-brown potatoes
  • 2/3 cup low-fat cottage cheese
  • ¼ cup Parmesan cheese
  • Pepper to taste
  • Paprika


  1. Place onion and margarine in a 1½-quart round casserole.
  2. Cover and microwave on high 3 to 3½ minutes.
  3. Stir in potatoes, cottage cheese, Parmesan cheese and pepper; cover.
  4. Stirring midway through cooking, microwave on high 9 to 11 minutes.
  5. Stir and dust top with paprika.
  6. Recover and microwave on high 1 to 2 minutes.
  7. Makes five servings, 155 calories each.
