Food History

Muffins have long been a staple in American homes, known for their versatility and ease of preparation. This recipe reflects a mid-20th century trend of incorporating canned and branded products like Dole Pineapple Juice into home baking. Pineapple, once considered an exotic fruit, became more accessible in the 20th century thanks to companies like Dole. Raisins, a classic addition to baked goods, provide a chewy texture and natural sweetness that pairs well with the pineapple. The inclusion of whole wheat flour reflects a nod to healthier baking trends.

Timeline

  • 19th Century: Muffins become popular in America, often made with cornmeal or wheat flour.
  • 1901: Dole begins commercial pineapple production in Hawaii.
  • 1920s-1930s: Raisins and other dried fruits grow in popularity in baking.
  • 1960s-1970s: Whole wheat flour gains popularity as health-conscious eating trends emerge.

Recipe Discussion

This recipe combines two flours, all-purpose and whole wheat, for a hearty yet light muffin. Brown sugar adds richness, while the pineapple juice and grated orange peel bring a citrusy brightness. The margarine creates a moist texture, and the raisins provide bursts of sweetness. Ground cinnamon enhances the flavor with a warm spice, making these muffins ideal for cooler months.

The batter is quick to prepare, and the recipe is versatile. You could add chopped walnuts or shredded coconut for extra texture. Baking at 375°F for 25 minutes results in muffins with a golden top and moist interior. The recipe makes six large muffins, but you can use a smaller muffin tin to yield more servings.

Preparation Tips

  • Grease the muffin tin well: Prevent sticking and make removal easier.
  • Do not overmix: Stir just until the ingredients are combined to avoid dense muffins.
  • Use fresh orange peel: For the best flavor, grate the orange peel right before adding it.
  • Cool slightly before removing: Let the muffins cool for about five minutes in the pan before transferring them to a wire rack.
  • Test for doneness: Insert a toothpick in the center of a muffin; if it comes out clean, they are ready.
