This Divinity recipe is a simplified version of the traditional Southern candy, using Hip-O-Lite marshmallow crème as the base. Hip-O-Lite eliminates the need to boil sugar syrups, making it easier and quicker to prepare than most divinity recipes. The result is a sweet, airy candy with a smooth texture that holds its shape, just like classic divinity.
Hip-O-Lite was a popular marshmallow crème brand in the mid-20th century, frequently used in candy and dessert recipes. This product simplified creating marshmallow-based treats, especially for home cooks who didn’t want to deal with melting marshmallows or preparing syrup. If Hip-O-Lite is unavailable, modern marshmallow crème can be used as a substitute. However, it’s fun to honor this nostalgic brand when possible.

Easy Divinity
Food History
Divinity, often associated with the American South, became popular in the early 20th century. The classic recipe involves boiling sugar syrup to a specific temperature, then whipping it into stiff egg whites to create a meringue-like candy. However, with the advent of marshmallow crème products like Hip-O-Lite, easier variations emerged, making this treat accessible to more home cooks.
Hip-O-Lite was a marshmallow crème brand introduced in the mid-1900s. It was often used in fudge, cakes, and other confections, particularly around the holidays. While Hip-O-Lite is no longer widely available, its legacy lives on in vintage recipes like this, prized for their simplicity and ease of use.

Timeline
- Early 1900s (U.S.): Divinity became a popular candy, especially in the South, where it was often made during the holidays.
- Mid-1900s: Hip-O-Lite marshmallow crème is introduced, simplifying candy-making and appearing in various dessert recipes.
- Present Day: Divinity remains a classic treat, especially during holidays. Many variations simplify the process using marshmallow crème.
Recipe Discussion
This version of divinity replaces the labor-intensive syrup stage with Hip-O-Lite, a marshmallow crème that helps achieve the desired fluffy texture. Beat the Hip-O-Lite with water and vanilla to stiff peaks to create the light, airy base for the candy. Adding powdered sugar and nuts gives the candy its sweet, crunchy texture.
The key to a good divinity is ensuring the mixture reaches stiff peaks before adding the sugar and nuts. The resulting candy should be firm enough to hold its shape when dropped onto wax paper but still light and airy in texture. The nuts add a pleasant crunch, contrasting the smooth, sugary base.
If Hip-O-Lite isn’t available, using any modern marshmallow crème will work just as well, though the texture may vary slightly. The nuts can also be customized based on preference—pecans, walnuts, or almonds all complement the sweetness of the candy well.
Preparation Tips
- Achieving Stiff Peaks: Beating the Hip-O-Lite mixture until stiff peaks form is crucial to achieving the right texture for the divinity. If the mixture isn’t firm enough, the candy may spread or flatten instead of holding its shape.
- Wax Paper: Dropping the divinity onto wax paper ensures easy removal once the candy sets. Parchment paper can also be used as an alternative.
- Customizing Nuts: Pecans are traditionally used in Southern divinity recipes, but walnuts or almonds are excellent alternatives. Make sure to chop the nuts finely to distribute them evenly throughout the candy.
