Food History

The key ingredients in Deviled Lettuce are linked to the evolution of convenience cooking in American homes. Miracle Whip, introduced by Kraft Foods in 1933, quickly became a household name due to its affordability and unique tangy flavor. Designed to be a cheaper alternative to mayonnaise, Miracle Whip has remained a staple in many American kitchens for nearly a century. Kraft’s Philadelphia Cream Cheese first created in 1872, also plays a vital role in the dish, adding creaminess and body to the filling.

The dish is also tied to deviled ham, first popularized by Underwood in the late 1800s. Deviled ham, mixed with spices and preserved in a can, provided an easy and flavorful way to add protein to various dishes. By the mid-20th century, recipes like Deviled Lettuce used these pantry-friendly ingredients to create show-stopping party foods.

Timeline

  • 1872: Philadelphia Brand Cream Cheese is introduced, becoming a staple in American kitchens.
  • In the late 1800s, Underwood created the Deviled ham and became widely used in sandwiches and appetizers.
  • 1933: Miracle Whip is introduced by Kraft, offering a tangier, more affordable alternative to mayonnaise.
  • 1950s-1960s: Deviled Lettuce and similar retro appetizers gain popularity at parties and potlucks.
  • Present day: This vintage dish enjoys a revival for its nostalgic charm and delicious flavor.

Recipe Discussion

The main ingredients in Deviled Lettuce create a flavorful and balanced filling that contrasts nicely with the crisp lettuce. Miracle Whip brings a tangy sweetness that sets it apart from traditional mayonnaise, while Philadelphia Cream Cheese adds richness and a smooth texture to the filling. Deviled ham provides a savory, spiced meatiness that complements the crunch from the celery, green pepper, and onion.

The filling is stuffed into a hollowed-out head of lettuce and then chilled to let the flavors meld together. When ready to serve, the lettuce is sliced into wedges, offering a fresh and crunchy contrast to the creamy, flavorful filling. Adding pimientos gives a burst of color and a slight sweetness that ties all the flavors together.

For those who might want to experiment, you could substitute deviled ham with cooked, crumbled bacon or even canned tuna for a different twist on the recipe. Similarly, Miracle Whip can be swapped with mayonnaise for a less tangy flavor, though it will alter the dish’s distinct profile.

Preparation Tips

Here are some tips to help make your Deviled Lettuce turn out perfectly:

  • Lettuce: Hollow out the head of lettuce carefully, leaving enough outer leaves intact to hold the filling. Rinse and dry thoroughly.
  • Chilling: After filling the lettuce, wrap it tightly and let it chill for several hours. This helps the flavors develop and allows the filling to firm up.
  • Cream cheese: Soften the cream cheese before mixing it with the other ingredients for more effortless blending.
  • Serving: Before serving, use a sharp knife to slice the lettuce into even wedges to ensure each portion gets equal filling.
