Creamy Carrot Soup

Ingredients

  • 2 cups of carrots, cut in 1/2 inch slices
  • 2 chicken bouillon cubes dissolved in 2 cups of boiling water or left over chicken broth
  • 1 green onion with top, cut in 2 inch pieces
  • 1 cup of nonfat dry milk powder dissolved in 1 cup of water
  • Salt and Pepper to taste
  • Minced green onion ( Optional )

Instructions

  1. Cook carrots in bouillon for 10 to 15 minutes or until tneder.
  2. Put in blender with green onion and whirl at high speed until smooth.
  3. Return to saucepan, stir in milk and heat through.
  4. Add salt and pepper to taste.
  5. Sprinkle with minced green onion
