Country Style Split Pea Soup Recipe

- ½ cup chopped onion
- 1 or 2 cloves garlic minced
- 1 tbsp butter or oil
- 1 cup green split peas
- 1 qt [ham or chip] stock
- 1 bay leaf
- ¼ cup diced celery
- black pepper
- 1 med potatoes peeled & dried
- 1 cup diced ham
- 4 small carrots peeled & sliced thin
- In a large pot saute onion & garlic in butter until tender, about five minutes.
- Add peas, stock, bay leaf & pepper.
- Heat until boiling.
- Reduce heat, cover & simmer until peas are tender, about 30 min.
- Add vegetables.
- Cover & simmer until vegetables are tender, 10 to 15 min.
- Stir in ham & heat through.
