Cottage Cheese Scrambled Eggs Recipe

- 6 eggs beaten
- ½ cup cottage cheese
- ½ cup (2 ounces) shredded Cheddar cheese
- ½ cup sliced fresh mushrooms
- 1 tablespoon minced onion
- 6 slices bacon
- Combine first 5 ingredients.
- Cook bacon in a medium skillet over low heat until crisp.
- Drain bacon; crumble and set aside.
- Pour off drippings, reserving 1 tablespoon in skillet.
- Add egg mixture; cook over medium heat, stirring often, until eggs are firm but still moist.
- Stir in bacon.
- Yield: 6 servings.
