Corn Meal Muffins Recipe

- 1 cup corn meal
- 1 cup flour
- 1/2 teaspoon salt
- 4 teaspoons baking powder
- 1 cup milk
- 1 egg, beaten
- 2 tablespoons shortening, melted
- Mix and sift the corn meal, flour, salt, and baking powder
- Add the milk gradually and then the well beaten egg
- Mix together and then add the melted shortening
- Add mixture to muffin pan
- Bake at 400 - 425 degrees for 20 - 25 minutes
