Coconut Meringue Cake

A Short History

Meringue, a mixture of whipped egg whites and sugar, has been a popular dessert component since the 17th century. When paired with the tropical flavor of coconut, it adds a delightful freshness to any dessert. Coconut Meringue Cake is a testament to the versatility of these ingredients, showcasing how they can be combined to create a dessert that is both elegant and comforting.

Tips for Making Coconut Meringue Cake

  • Creaming Butter and Sugar: Start by creaming the butter (or vegetable shortening) and sugar until light and fluffy to create a smooth base for your cake batter.
  • Egg Yolks: Incorporating egg yolks one at a time ensures they are fully integrated into the batter, contributing to the cake’s richness.
  • Dry Ingredients: Sifting the flour, baking powder, and salt together helps to aerate the mixture, resulting in a lighter cake texture.
  • Milk Addition: Alternating the addition of dry ingredients with milk ensures a smooth, evenly mixed batter.
  • Lemon and Vanilla: The addition of lemon and vanilla to the batter infuses the cake with a bright, aromatic flavor.
  • Meringue Preparation: For the meringue, ensure the egg whites are at room temperature to achieve maximum volume when beaten. Adding confectioners’ sugar gradually helps to create a glossy, stiff meringue.
  • Baking: Baking the cake at a moderate temperature allows the cake to cook through while giving the meringue a crisp, golden top without burning the coconut.
