Coconut Meringue Cake Recipe

- 5 tablespoons butter or vegetable shortening
- 10 teaspoons sugar
- 3 egg yolks
- 1 cup flour
- 1 1/4 teaspoon baking powder
- 1/4 teaspoon salt
- 3/8 cup milk
- 1/4 teaspoon lemon
- 1/2 teaspoon vanilla
- 3 egg whites
- 1 cup (or less) confectioners sugar
- 1 cup coconut
- Mix in the order given and pour into an 8" x 8" x 2" pan and on top of cake batter place the meringue
- Beat the egg whites and add the sugar slowly
- Spread over cake batter
- Sprinkle coconut over the top of the meringue
- Bake at 325 - 350 degrees for 40 minutes
