Coconut Meringue Cake

Coconut Meringue Cake

Ingredients

Cake Batter

  • 5 tablespoons butter or vegetable shortening
  • 10 teaspoons sugar
  • 3 egg yolks
  • 1 cup flour
  • 1 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 3/8 cup milk
  • 1/4 teaspoon lemon
  • 1/2 teaspoon vanilla

Meringue

  • 3 egg whites
  • 1 cup (or less) confectioners sugar
  • 1 cup coconut

Instructions

Cake Batter

  1. Mix in the order given and pour into an 8" x 8" x 2" pan and on top of cake batter place the meringue

Meringue

  1. Beat the egg whites and add the sugar slowly
  2. Spread over cake batter
  3. Sprinkle coconut over the top of the meringue
  4. Bake at 325 - 350 degrees for 40 minutes
