Coconut Cream Pie

Coconut Cream Pie


  • 1 cup milk
  • 1 cup light cream (or 2 cups milk total)
  • 3 tbs. flour
  • 1 tbs. cornstarch
  • ½ cup sugar
  • ½ tsp. salt
  • 1 tsp. vanilla
  • 3 egg yolks slightly beaten
  • ½ cup coconut
  • 1 baked pie shell


  1. Scald milk & cream in top of double boiler.
  2. Combine flour, cornstarch, sugar, & salt & mix thoroughly.
  3. Add to scalded milk & cook 15 min, stirring constantly.
  4. Stir a small amt. of mixture into beaten egg yolks, return to double boiler, and cook a few minutes longer.
  5. Cool & add vanilla & coconut - - - Pour filling into baked pie shell.
  6. Spread meringue lightly on filling and bake as directed.
