Club Chicken Casserole Recipe

- 4 T butter or oleo
- ¼ cup flour
- 1 14½oz can [evap] milk
- 1 cup of chicken broth
- 3 cups cooked long grain rice
- 2½ cups diced chicken
- 1 - 3oz can of mushrooms (drained)
- ⅓ cup chopped green pepper
- ¼ cup canned pimento (chopped)
- Melt butter, add flour, milk, broth ½ cup water.
- Cook & stir until thick & bubbly.
- Add rice, chicken, mushrooms, gr. pepper, pimento, 1½ tsp salt.
- Pour into casserole & bake at 350° for 40 min.
- Can be topped with ¼ slivered almonds.
