Club Chicken Casserole

Club Chicken Casserole


  • 4 T butter or oleo
  • ¼ cup flour
  • 1 14½oz can [evap] milk
  • 1 cup of chicken broth
  • 3 cups cooked long grain rice
  • 2½ cups diced chicken
  • 1 - 3oz can of mushrooms (drained)
  • ⅓ cup chopped green pepper
  • ¼ cup canned pimento (chopped)


  1. Melt butter, add flour, milk, broth ½ cup water.
  2. Cook & stir until thick & bubbly.
  3. Add rice, chicken, mushrooms, gr. pepper, pimento, 1½ tsp salt.
  4. Pour into casserole & bake at 350° for 40 min.
  5. Can be topped with ¼ slivered almonds.
