Recipe Discussion
This chocolate chiffon pie starts by melting chocolate until smooth, then adding gelatin to help set the filling. Egg yolks, sugar, and a touch of salt create a rich base, while beaten egg whites provide a light, airy texture.
Once the filling thickens, it is cooled and carefully folded with stiffly beaten egg whites to maintain its fluffiness. The mixture is then poured into a pre-baked pie shell and left to chill until firm. The pie is traditionally served with a generous topping of whipped cream, adding extra creaminess to each bite.
Preparation Tips
- Use high-quality chocolate for the best flavor. Semi-sweet or dark chocolate works well.
- Dissolve the gelatin completely before adding it to the mixture to avoid lumps.
- Chill the mixing bowl before beating the egg whites to help them whip faster.
- Fold the egg whites gently to keep the filling light and fluffy.
- Let the pie set overnight for the best texture.
