- 1 3 to 4 lb. broiler
- Freshly ground pepper
- 4 tablespoons olive oil
- 1 teaspoon rosemary
- 1/3 cup dry Marsala
Cut chicken into serv. piece, rub with salt and pepper to taste. Put oil in skillet, add crushed garlic, brown chicken on both sides about 15 minutes. Sprinkle chicken with Rosemary and slowly add 1/3 cup wine over, simmer over a low flame about 30 minutes. If nec. add more marsala to prevent burning. Serve very hot.
