Chicken Green Chili Casserole

Cook Time: 20 minutes
Total Time: 20 minutes

Ingredients

  • 1 chopped onion
  • 4 whole chicken breasts
  • 3 long green chiles, roasted, peeled and seeded
  • ¼ cup plus 2 Tbsp. butter
  • ¼ cup plus 2 Tbsp. flour
  • 1 ½ cups sour cream
  • 1 ½ lbs. Monterray Jack cheese
  • 18 corn tortillas

Instructions

  1. Cook onion in water.
  2. Add chicken breasts and water to cover.
  3. Cook until tender (about 10 minutes.)
  4. Skin, bone and dice chicken.
  5. Salt lightly.
  6. Reduce broth and skim off teh fat.
  7. Blend onion in blender with some broth.
  8. Add to pot.
  9. Blend chiles with some broth.
  10. Add to broth to taste. (Broth should be fairly spicy.)
  11. In saucepan, cook flour in melted butter.
  12. Add hot broth gradually, cooking and stirring until thickened.
  13. Oil a 4-qt casserole.
  14. Tear tortillas into quarters.
  15. Put layer in bottom of casserole.
  16. Add layer of chicken, then grated cheese, then some sauce.
  17. Repeat.
  18. Add some sour cream.
  19. Repeat layer of tortillas, chicken, cheese and sauce and finish with a layer of tortillas; top with sauce and sour cream.
  20. Cook, covered, in 350° oven until bubbling, about 20 minutes.
