Chicken Green Chili Casserole Recipe

Chicken Green Chili Casserole
Ingredients
- 1 chopped onion
- 4 whole chicken breasts
- 3 long green chiles, roasted, peeled and seeded
- ¼ cup plus 2 Tbsp. butter
- ¼ cup plus 2 Tbsp. flour
- 1 ½ cups sour cream
- 1 ½ lbs. Monterray Jack cheese
- 18 corn tortillas
Instructions
- Cook onion in water.
- Add chicken breasts and water to cover.
- Cook until tender (about 10 minutes.)
- Skin, bone and dice chicken.
- Salt lightly.
- Reduce broth and skim off teh fat.
- Blend onion in blender with some broth.
- Add to pot.
- Blend chiles with some broth.
- Add to broth to taste. (Broth should be fairly spicy.)
- In saucepan, cook flour in melted butter.
- Add hot broth gradually, cooking and stirring until thickened.
- Oil a 4-qt casserole.
- Tear tortillas into quarters.
- Put layer in bottom of casserole.
- Add layer of chicken, then grated cheese, then some sauce.
- Repeat.
- Add some sour cream.
- Repeat layer of tortillas, chicken, cheese and sauce and finish with a layer of tortillas; top with sauce and sour cream.
- Cook, covered, in 350° oven until bubbling, about 20 minutes.
