Chicken Green Chili Casserole

Food History

Casseroles have been a staple in American cuisine, particularly because they can be made ahead of time, are great for feeding a crowd, and often improve in flavor when left to sit. The integration of green chilies into this dish adds a Southwestern flair, making it a flavorful variant that combines traditional American comfort food with Mexican-inspired elements.

Recipe Discussion

The preparation begins with poaching chicken breasts with onions to infuse them with flavor. The chicken is then skinned, boned, and diced. Simultaneously, a homemade spicy broth is created from the cooking liquids enhanced with blended green chilies and onions for depth of flavor. A roux made from butter and flour thickens the broth, transforming it into a rich sauce. Layers of torn corn tortillas, chicken, Monterrey Jack cheese, and the green chili sauce are assembled in a casserole dish, with dollops of sour cream adding a creamy tanginess to each layer. The dish is then baked until bubbly and golden, perfect for serving hot.

Serving Suggestions

Serve the Chicken Green Chili Casserole hot from the oven, garnished with fresh cilantro or chopped green onions for added color and freshness. It pairs well with a side salad, guacamole, or a scoop of rice to balance the richness of the casserole. For a complete meal, consider serving with a light, crisp white wine or a cold beer.

Preparation Tips

  • Chicken Preparation: Ensure the chicken is thoroughly cooked but still moist before dicing. Overcooking can make it tough.
  • Layering: Be generous with the layers to ensure every bite is moist and flavorful. Ensure the top layer of tortillas is thoroughly covered with sauce and sour cream to prevent them from drying out during baking.
  • Spiciness Adjustment: Adjust the amount of green chilies based on your heat preference. The chilies can be very mild to very spicy, so tasting and adjusting is key.
  • Make Ahead: This casserole can be assembled a day in advance and kept refrigerated until ready to bake, making it perfect for busy schedules.
