Cherry Clafoutis

Cherry Clafoutis


  • 3 eggs
  • 1 1/4 cup milk
  • 2/3 cup flour
  • 1/3 cup sugar
  • 1 tablespoon rum
  • 1/2 teaspoon salt
  • 16 ounce can of dark sweet pitted cherries
  • Whipped cream


  1. In a small mixing bowl beat eggs until foamy
  2. Add milk, flour, sugar, rum, and salt
  3. Beat at low speed until smooth
  4. Pour batter into a butter pie pan
  5. Arrange 1/2 the cherries into the batter
  6. Press down gently
  7. Bake at 350 degrees for 40 minutes or until knife comes out clean
  8. Let stand 15 minutes
  9. Garnish each piece with remaining cherries and whipped cream
  10. Serve warm
